Its been another crazy busy week with equally crazy weather. Seriously is winter ever going to be over! Its been on of those weeks were I have been falling asleep as soon as I hit the pillow but I am loving having a busy schedule again. Lets recap this busy week with some Friday Five action!

1. On Tuesday I had the chance to go on a little field trip for work with a group of visiting students from America. This was the first time in over 5 months that I have heard English being spoken all around me and it was a bit of a shock. Apparently words like selfie, ratched and hashtag are super in right now. Or it may be the fact that I was spending the afternoon with a group of teenagers that made it seem that way.

It was really interesting hearing their initial thoughts about Iceland. At first I found myself thinking what a silly comment that is so narrow minded, but then I realized I thought the same exact things when I first came to Iceland! Being able to share some of my insight about Iceland was really fun, especially when we took them to see the beautiful Blue Lagoon. Blue Lagoon
The Blue Lagoon will always amaze me, it is just so beautiful. Our trip also included a visit to a geothermal plant, some time spent out by the ocean, and I somehow found myself out caving exploring in some lava tunnels.

It was an eventful day and I have lots of pictures to share. By the time the trip was over I was completely exhausted and I still can’t get the word selfie out of my head. Maybe its because I am also a bit obsessed with the song #SELFIE but who isn’t right now.

2. Currently I am working in a position that I really enjoy but at the moment I am just a temporary employee. This means little pay and the constant stress of whether or not I will be offered a full time position. I won’t know for a few more weeks what the future of my position will be but I am really hoping for good news. Now that I have started this job I don’t want to have to walk away and start the job search all over again. Fingers crossed good news will be headed my way!

3. I have been really into meal planning lately and have been spending way too much time browsing Pinterest for new recipes to try out. This week I tried 2 new recipes using Cauliflower, I am trying to sneak in vegetables as much as possible without H knowing it. I will say I think my plan was successful, H loved both the recipes and Cauliflower is now one of my favorite vegetables to cook with.

I didn’t think to grab a picture until after I starting eating but this dinner was so good I had to share. I made garlic cauliflower “mashed potatoes” and coconut chicken, it was amazing! This always made for really good leftovers, highly recommend trying these recipes out!

4. Our weather seems to be just getting worse and I am starting to feel like I will never see the sun again. I know this is being dramatic but when I look at my weather forecast and all I see is rain, snow, wind, and cold temperatures for the next week it makes things look hopeless. I blame that one sunny day we had for getting my hopes up!

This stormy weather is really making me miss my car. When I am riding my bike to work with the rain hitting my face and the wind threatening to blow me over I can’t help but think why in the hell I left my almost new car back at home.

If only it weren’t for the fact that I moved across the world then my car could have came along. Now I just need to figure out what I am going to do with my car that is just sitting back at home draining my bank account with those lovely car payments. How was I suppose to know that I would be moving to Iceland only 6 months after I signed my life away to car payments.

This whole car thing has been causing some serious stress these past few weeks. Adult decisions are just to difficult! And why in the world do cars have to cost so much only to lose their value quicker than you can drive it! Car rant over.

5. To end things on a note here are some things I am looking forward to in the next couple weeks.

  • This weekend H and I will be attending the annual ball for my work. I am really looking forward to the evening and I am excited to finally get to be the one taking H instead of me just attending his work events.
  • H’s mom is doing some remodeling which means we get a few new “free” furniture pieces. I can’t wait to rearrange our apartment and make it feel a bit more cozy.
  • The first weekend of April we will be joining some friends for a trip out to the countryside. I have always wanted to stay in one of the cabins everyone is always talking about so I can’t wait to get out of the city for a few days.
  • Even though I am stressed and nervous about my future job status I am also really looking forward to what pans out in these next few weeks!

One last note to add, today marks my 5 month in Iceland! I can’t believe I have been away from home for 5 months already. Some days it feels like I have been here forever and others times it seems like I just arrived. With each day that goes by the more comfortable I am in my surroundings. The first 6 months are supposedly the toughest so I am almost there! I will have my 5 month recap up next week, for now I am going to celebrate surviving this long.

      Actually it didn’t taste like cauliflower at all I was surprised. I have tried a few recipes but this one was by far my favorite. Ugh I know right! I think ratched is popular from the song SELFIE but I have no idea what it means!

    Ugh hate the words ratchet (why not just say wretched?) and turnt up. . Also I tried to make cauliflower pizza once and though it tasted good it was a goopy mess!

      I agree, I don’t get why these words are so popular to say! I have had the same issue before with cauliflower pizza turning out too goopy. While this wasn’t completely crispy it was the most baked crust I have made!

    Congrats on your five month-aversary! That Blue Lagoon looks amazing, and the caving - what an awesome experience. Making me even more certain that a trip to Iceland has to happen in the near future.
    I’m so impressed by your cauliflower pizza! I’ve tried it twice and both times I ended up with cauliflower rice in my hair and disintegrating pizza on my plate - but perhaps the third time would be the charm?

      Haha oh I just had the best image of you making the cauliflower pizza because I looked the same! Our kitchen was a disaster. The recipe I used though was the best one so far so third time a charm for sure! The Blue Lagoon is amazing, I def think a trip to Iceland is needed for you!

      Are you thinking how much do cars cost to buy in Iceland or to rent? H and I don’t own a car, they are pretty expensive and we live right in downtown so its easy for us to get around. A car though is definitely on our minds lately with this cold weather!

      I think I just end up getting hungry browsing pinterest but then it also helps me plan meals since I want to make them all! Sticking to our meal plan though has been a different story!

      Twice baked cauliflower, yum I must try that! I know that is exactly how I feel about my car, she was my first new car and beautiful! It only I could stop thinking about how much money I will lose when I sell it then it would make things a bit easier to cope with.

    I surprisingly like cooking with cauliflower much more than I thought I would! I’ve made the mash, it’s so good. This weekend I’m trying a recipe where you sub cauliflower for rice in fried rice!

    did you find a recipe that works for the cauliflower crust? I’ve heard such mixed things about it. I made buffalo cauliflower bites in the oven…sooooo good!

      The one I linked in my post is the best I have found so far! The crust still isn’t all the way crispy but pretty close. I have been wanting to try those buffalo cauliflower bites, they sound so good!
